This was a fun one, I started with solid gradient fill layers, gradient rather than solid to reduce the "painted look", using the color blend mode for his skin and the wood of the barn and vivid light to bring out the mud on his pants and the wear on his shirt.
I then used the layer mask to trap the areas I wanted the color to show through. Selecting all the previously completed masks and inverting the selection so each new color doesn't bleed into the previous ones is helpful and the main reason I use color layers.
For tricky areas like the beard and the mud on his pants I copy the image data to the mask channel and manipulate that for my mask. (note that the data must be copied from a single channel and transfered to the mask, trying to copy the image won't work)
Finally, a couple on adjustment layers (selective color and curves in this case). In this image I went back to the mask with the Dodge tool and faded the more worn areas of his clothing a little.
Time to completion: 22 minutes
This is my first time trying to explain what I do, constructive criticism is appreciated, I've never been very good at explaining things.

I dont quite get this part of your explanation tho
