How do you change the everything in a pic of a model to sepia and still retain the colors in a models clothing?

many ways to do this...
make duplicate layer (just in case)
Try: set history point in your history list to where the image is still in colour.
then: Image=>Adjustments=>Desaturate; then apply your sepia filter; then select your history brush, set it how you prefer and paint the colour back into your image.

another way would be to make a hue/saturation adjustment layer...check the colorize box and adjust the hue slider until you get the desired sepia color (you will probably have to pull the saturation down also or it will be too much)...then you can just paint black on the hue/sat layer's mask over the models clothes to "erase" the sepia off them.
