Mom's Jalapeño Cheese Bread

Bread:

1/3 c. water 3 lg. eggs
¼ c. butter or margarine, cut up 1 t. salt
3 ½ c. bread flour 3 T. sugar
2 t. bread machine yeast ¼ c. jalapeños, chopped
¼ to ½ lb. Shredded sharp cheddar

Add water, eggs, butter, salt, flour, sugar, and yeast to bread machine pan in the order suggested by manufacturer. Select dough/manual cycle. When bread machine beeps, add jalapeños. Make filling below while bread machine cycles. When cycle is complete, remove dough from machine to a lightly floured surface. Roll out into rectangle (aprox. 12 inches x 18 to 20 inches). Cut dough into 3 long strips and fill each strip lengthwise with jalapeño filling. Seal edges of dough together to enclose filling in 3 long ropes of dough to be braided. Braid dough together on a cookie sheet sprayed with Pam, sealing ends and tucking them under loaf. Let rise in a warm, draft-free place until almost doubled in size, 20 to 30 minutes. Top with shredded cheese to taste. Bake at 375° for 12 to 14 minutes or until done.

Filling:

¼ c. butter or margarine 1 c. finely chopped onion
1 T. grated Parmesan cheese 1 T. sesame or poppy seed
1 t. garlic salt 1 t. paprika
¼ c. jalapeños, chopped

In small saucepan, melt butter; add remaining ingredients. Mix well.

*Note – jalapeño quantities listed will produce a mild to medium heat depending on the intensity of your jalapeños. For hotter/spicier bread, add more jalapeños!
