View Full Version : Carole's Jicama salad

Here's one my wife came up with. We usually have it to complement a Mexican dinner, although it would be good with many dishes. If you have ever made cucumbers and onions with vinegar, use the same vinegar mix you would use with this one. Here's the way she made it:

About 3 cups of vinegar (depending on how much you want to make).

Dilute with a little water if desired (she didn't).

Mix in enough sugar to get the taste right for you.

Peel and slice cucumbers (how many is your choice), and put into the vinegar mix.

Slice a red onion (amount is your choice), and add to cucumbers.

Peel an orange (amount is your choice), segment it, and add to above.

Peel jicama (again, amount is your choice), dice, and add to above.

That's it! Easy enough. Serve cold.

sounds good Ed! I've tried Jicama a couple times (I've always eaten it raw) and I really liked it.

I know what it is but I've never known what to do with it. Sounds like some interesting mix of different flavors. I'll have to give that one a try.

Yes, a definite mix of flavors. We had a Mexican meal yesterday, and everyone loved it. It goes real fast.
