And another "Happy Thanksgiving " Not to sure on the menu Swampy ! ! ! !
Just got round to trying sweet potatoes this year, but Pole beans and swamp cabbage salad
and you missed out pudding

Oh that is nice, Palms! Soft and textured, just the way I like 'em.

Well, the menu is southern, but the "Yankee" equivalents would be: Pole Beans=Green Beans, cooked in the southern tradition with fatback (or bacon) and a little onion. Swamp Cabbage=Heart of Palm (that you pay dearly for in fine restaurants) which can be cooked (again with fatback or bacon) or prepared as a coleslaw or with vinegar.

Sweet Potatoes are often prepared "en casserole" almost like a pumpkin pie filling or just baked and served with butter. Most folks in the south make the casserole with oranges or pineapple, pie spices and marshmellows. Mmmm goood. I guess it could surplant pudding. LOL

We make the sweet potatos in a casserole and top with chopped pecans or walnuts. Very much like sweet potato pie but in a casserole dish. Also depending on size, about 6 mins. on high in a microwave, turning them once, bakes them quite nicely. Then peel, cut or mash, and add butter or margarine.

As for the swamp cabbage Swampy, you must have tried it with sherbert. You make the salad and top it with a dollop of sherbert. Lime flavor, or lemon is good.

Then there is fried or smoked mullet and grits....but that's another story for another day.

Never tried the sherbert thing, Steve. Thanks for the tip.

Ohhh... cheese grits!! Mmmmm. (Ever see the price on a bag of grits in the souvenir shops at the Atlanta airport? $12-$14 a pound!!! LOL)

I love smoked mullet. Do you remember when mullet was trash or bait fish? LOL
