Question Changing a photo's background and preserving outlines

Hello. Although changing the background on relatively simple pictures is easy, I'm having a great deal of trouble whenever there's hair involved (for example a person sitting infront of a backdrop at a portrait studio). No matter what, I just can't capture the subtle strands of hair that poked out at times or (and this is more common) I can't find a realistic way to delete the old background that pokes through the hair without it looking too soft around the edges. Any ides?
