I was wondering how many pictures does everyone have in their portfolio, just for retouching and restoration? Just curious when i should stop building mine. Its addicting and i don't think I can stop!

Who is your intended viewer? If other retouchers, then show off to your heart's content. If prospective clients, your job is to provide them with the information necessary to allow them to make an informed decision about whether or not to hire you. Show exactly what you need to let them know your abilities and your range, but no more. Fifteen images that show the same effect or approach will probably mean that they won't be seeing whatever comes after because they'll assume they've seen everything you do.
