In my days at a newspaper, a photo editor was the person who selected the photos to go with a story. I'd go with "Image Editor" or "Image Editing by"

Thank you everyone for the lively (and fun!) discussion. I guess I wasn't wrong to be confused about how to reference my work with so many opinions. I'm so far inclined to "image processing by" simply because it seems to comprehensively capture what I'm doing. Even if I didn't do any specific fixes, I'm still balancing light and color and general preparation for an outlet. I like that.
