How to apply this effect? Link inside...

I would like to apply a similar effect to a few of my photos. Any ideas? Thanks.

I'd say the first image is varying degrees of desaturation applied to various parts of the image.
The second looks like it was desaturated to some degree first, then turned sepia, then that desaturated color brought back in with the history brush in certain parts.
