is this hair done in camera or in post-production?

Just happen to see this old editorial shot by the fab Mert and Marcus with Cameron Diaz and as she is blond been wondering if the hair was dyed before the shoot or done afterwords in PS? Is it possible to get that effect in post production at all?

B&W conversion. You choose what grey value each hue will adopt.

No need for examples. Create an image with strokes of different hue but same saturation and value. Desaturate it and you will see that all colors become the same grey. Now, instead of desaturating, use a bw adjustment layer and you will be able to assign a different value to each hue. Thats how BW works now, and how it has always worked by the use of colored lens filters.

In this case, she's a blonde so there should be yellow in her hair. Create a BW adjustment layer and bring the yellows up in value. That will also brighten skin, so compensate by bringing down the value of reds.

This is one of those things that you need to do yourself.
