What color profile for my workflow?

When I open any RAW picture, Camera RAW automatically assigns "ProPhoto RGB 16 bit" color profile to it. When I open it in Photoshop, its still ProPhoto RGB 16bit. When I want to save it, its still ProPhoto. The question is - should I leave it like this? I don't understand color profiles, but I heard some of them may not display properly on somebody's computers.
I'm usually saving final images to JPEG and sending it to friends or uploading on the internet. So shoudl I convert final pictures (at the end of my workflow) to other color profile or should I adjust Camera Raw settings (at the beginning of my worlflow)?

The short answer is yes. The longer answer, which you really need to understand because this is a big deal will take some reading on your part before moving forward. Start here:

The documents you post to the internet and many other output needs should be a conversion from ProPhoto, your archive color space, to sRGB (as well as size and final file type: TIFF, JPEG etc).

Re: What color profile for my workflow?

PLEASE- do not save final version as a Jpeg- the Jpeg format inherently damages the file. Save it as a tif or a psd file.
Then when you want to e-mail a copy- make a sRGB jpeg version to send.

I would leave it in Prophoto until you need to export it. If going for web convert to sRGB, if printing convert to CMYK.
