You did not mention what editing tool you are using or version so I will assume Photoshop CS5.x
- On the original layer make a selection of the skin areas you want to remove color.
- Add an adjustment layer over the original image (this will automatically turn the selection into a layer mask for the adjustment layer). To adjust skin tones I typically use a Curves Adjustment Layer yet you can use other approaches and alternate Adjustment Layers
- At this point or later, you can click on the Layer Mask and use Select > Refine Mask to tune in the edges of the Layer Mask as desired
- Change Adjustment Layer attributes to create the desired skin tones (the mask will prevent changes from happening to non-skin areas.
