I can't find a tool on RP that allows me to search for posts about Erwin Olaf's retouching technique, but would like to know if any of you can provide a bit of insight into achieving his 'look'. I've included an example below.

To the OP:
Erwin Olaf is a master of photography and light. Hence the painterly quality of his work. To achieve his "look" is much more than retouching. In this particular series the post work is not the main thing:
See this video (it's over 20 minutes long and in dutch and totally worth it).
The video is from the making of "The Siege of Leiden" –*this is the series where that still is from (the one you linked). It'll give you an idea of how he shoots it, see the light and how he uses, see how the images straight out of camera compare to the final image. Another factor is that he's shooting with a monster digital back and camera. This gives you sharpness and an amazing dynamic range. You can't underestimate that.
The images are very well lit so the post work is very controlled, balanced with a lot of dodging and burning plus very good comping.
