Black Forest Cheesecake

I found this reeally good cheesecake recipe a couple days ago and tried it. I warn you now, this is *very* addictive stuff!!!

Crust:

1/3 cup Butter or Margarine
1 1/2 cup Chocolate wafer crumbs
2 tbsp. Granulated sugar

melt butter in saucepan. stir in crumbs and sugar. press into 10" springform pan and chill.

Chocolate filling:

4 - 8oz of Cream cheese
1 1/2 cups Granulated sugar
1 cup cocoa
4 large eggs
1 cup whipped cream
1 tsp. vanilla
1/2 cup chopped maraschino cherries

Beat sugar and cream cheese together in a mixing bowl. mix in cocoa, then beat in eggs one at a time. add cream and vanilla and beat in slowly. fold in cherries.
pour mixture over chilled crust and bake at 325F for approx. 1 hour and 15 minutes, then run knife around edge to loosten and cool completely.

Toppings:

19oz Cherry pie filling

Spread as much pie filling as desired evenly on cooled cake.

Melt 1/3 cup of chocolate chips and drizzle or pipe over filling.

Beat together until stiff:

1 cup whipped cream
1 tbsp. granulated sugar
1/2 tsp. vanilla

Pipe or spoon around outside edge

Chill. serves 12

David, I think it is cruel and unusual punisment to put a cheesecake recipe on the forum so close to the 1st of the year. My diet will last for at least another week or two. Could't you have waited?

I can't believe I missed this thread before. I could smell the chocolate, but didn't know where it was coming from. Sounds like a real winner to me!
