The first one is from Jurassic Park Malcolm (the mathmatician talking to Hammond (the Owner) about his dinosaur amusement park. The second one is Will Smith in Independence Day when he first flys the alien spacecraft.

I know Make my day was a Clint Eastwood but don't remember which movie exactly. Dirty Harry maybe?
Then the one about the bigger boat is Roy Schieder in Jaws just after seeing the shark for the first time.
The others are familiar but I'm lost on them.

only one I can think of is Five Easy Pieces and it's Jack Nicholson.. but if that's the one, I believe he said:
"I want you to hold the tomato, I want you to hold it between your knees."
This was because she said toast was not on the menu. So he ordered a toasted tomato sandwich... hold the tomato.
