  • Mexican Pizza

    If you have a breadmaker, take the pizza recipe and substitute 1/4 cup cornmeal for 1/4 cup flour.

    Ingredients:
    1 lb. ground chuck
    1 small onion chopped
    1 - 16 oz. can refried beans
    1 1/4 cup chunky medium salsa
    2 - 4 oz. cans diced green chiles, drained well
    1 - 8 oz. pkg. Monterey Jack cheese
    1 - 8 oz. pkg. mild Cheddar cheese

    Brown ground chuck & onion.

    Spread pizza dough in 11 X 16 X 1 cookie sheet (or 2 round pizza pans).

    Spread refried beans onto the dough.

    Mix salsa with ground chuck & onions and spread this onto the refried beans.

    Spread green chiles on this.

    Grate both cheeses & sprinkle on top of green chiles.

    Bake in preheated oven at 400 degrees for 30 minutes or until cheese is well melted and brown, and crust is light brown.

    Cool 10 minutes before cutting.

    Top individual slices with salsa if desired.

    We'll be having some in about 30 minutes. Good stuff.

    Oh good, I got a bread maker so this will work out great. I love Mexican food.

      I am always looking for new recipes to try out with the breadmaker....thanks ED. I am not a big fan of refried beans so I will probably leave them out, but the rest sounds yummy!

        OK since I see there are some vegetarians onboard, I think this may do well here. We are not all vegetarians at our house but the taste is so good it doesn't matter. It's the only lasagna I make. It does make an awful lot but I usually cut it up and freeze it for individual meals.
