you probably wouldn't think of putting
chocolate and carrots in the same food,
but this is sooooo good.
Chocolate Carrot Cake
1 cup Granulated sugar
1 cup Cooking oil
3 Large eggs
1 tsp. Vanilla
1 1/3 cups All-purpose flour
1/4 cup Cocoa
1 1/2 tsp. Baking powder
1 1/2 tsp. Baking soda
1 1/2 tsp. Ground cinnamon
1/2 Tsp. Salt
2 cups Finely grated carrots
Beat sugar and cooking oil
together in mixing bowl. Add
eggs 1 at a time, beating
well after each addition.
Add vanilla. Mix.
Stir next 6 ingredients togeth-
er in separate bowl. Add. Stir
until moistened.
Add carrots. Stir. Turn into
greased and floured 12 cup
(2.7 L) bundt pan. Bake in
350°F (175°C) oven for 30 to
40 minutes or until an inserted
wooden pick comes out
clean. Cool. Makes 1 cake.
for topping, I just melt milk
chocolate chips in a small pan,
and spoon it onto the cake (around
the top, and it should run down
the sides of the cake)
