Didn't quite know what to do with this one, so I just messed around. I used my extreme color filter on it, FP Tachyon, more extreme color filter, Tachyon again, smoothing.
You'll notice that the areas that had little saturation to begin with are effected the least, and the highly saturated areas are effected the most.

Russell's "Seeing in Black and White" tutorial available at www.RussellBrown.com, is pretty slick and very easy to use.
In a nutshell you place two Hue/Saturation adjustment layers on top of a color layer. Top adjustment layer: Set saturation slider to -100. Bottom adjustment layer: For each color channel, adjust the lightness slider.
