I'd stick with MP4 (H.264 AAC) for longterm compatibility. You could also rip an ISO image for 1:1 preservation but not really great for playback or editing. I'd probably use both.
Avoid AVI, WMV, MOV and DIVX/XVID
I use 2-pass VBR processing for best quality in smallest file (though takes longer to render).
I'm also a fan of the TMPGE line of editors, particularly if you have a newer NVidia graphics card. I'd avoid Adobe products as they are massive overkill with a learning curve to match (although Premier Elements isn't horrible).
